INTRODUCTION:

In 1079, the German people first added hops in beer brewing, so that make beer have salubrious bitter and fragrance flavour. From then, hops hailed as “beer soul”, become beer brewing one of the indispensable beer raw materials. Make beer possess unique bitter taste and aroma, and have preservative ability and clarify wort ability. Hops scientific name is humulus lupulus, others name are hopvine and golden hop, Cannabaceae Humulus L. perennial climbing herbaceous plants, heterothallism, used the female flowers for brewing.

FUNCTION:

In the process of beer brewing, hops have irreplaceable function:

  1. Make beer has salubrious aromatic smell, bitter taste and preservative ability. The aromatic of hops and fragrance of malt endow beer a subtle flavor. Hops itself is a natural preservative, it endow the beer special scent, in the meantime also extend the beer shelf life.
  2. Take shape excellent beer foam. Beer foam is the complex from isohumulone in hops and foam albumen in malt. The fine hops and malt can brew beer foam of pure white, fine and smooth, abundant and lasting hang on cup.
  3. In favour of clarify the wort. In the process of wort boil, due to add hops can separate out the protein complexation from wort, so it has the function which clarifies the wort, brewing out pure beer.
  4. Hops strong hop flavour can balance wort natural sweetness and stimulate appetite.
